Abstract:
      Buckwheat contains a variety of active substances,which have an important effect on human health.The studies on buckwheat peas active ingredient in the seedling stage under controlled water conditions show that with changes of buckwheat germination time,the content of rutin is in curve,and reaches the peak 23~25 days after sowing,so it’s the best season for harvest;Almost no trypsin inhibitor activity can be detected 21 days after sowing,when the nutrients are more easily absorbed and used by human body.The content of all kinds of amino acid in buckwheat peas is in balance,and the content of vitamin and mineral is higher than that in wheat flour and rice.So its nutrition is an incredible improvement material for people’s diet.
