| Abstract: |
| The experiment utilized the fruits of ‘Luntai White Apricot’ as the experimental material and sprayed methyl jasmonate(MeJA) solutions at concentrations of 1, 3, 5 mmol·L-1 and 7 mmol·L-1 during the fruit expansion period, and water was sprayed as the control (CK). After the fruits matured, the effects of different concentrations of MeJA on the basic physicochemical indicators, texture properties, and volatile metabolite content of the fruits were analyzed. The results showed that among all the treatment groups, the 5 mmol·L-1 MeJA treatment had the most remarkable effect on enhancing the quality of ‘Luntaif White Apricot’. Compared with CK, the soluble solid content of the fruits under this treatment significantly increased by 19.48%, the vitamin C content rose by 31.05%, and the soluble sugar content increased by 54.14%. Concurrently, the fruit firmness, chewiness, and adhesiveness also significantly rose by 42.91%, 37.70%, and 44.24%, respectively, effectively maintaining the original texture characteristics of the fruits. In terms of volatile metabolite analysis, a total of 967 volatile metabolites were identified in the five treatment groups. Compared with CK, exogenous spraying of MeJA significantly affected the composition and relative content of volatile metabolites in ‘Luntai White Apricot’. When the MeJA concentration was 5 mmol·L-1, the total content of volatile metabolites increased by 33.50% compared with CK. Through the analysis of the relative odor activity value, it was found that the terpenoid with the greatest contribution was 4-(2,6,6-trimethyl-1-cyclohexen-1-yl)-3-buten-2-one, the ester with the greatest contribution was butanoic acid, 3-methyl-2-phenylethyl ester, and the heterocyclic compound with the greatest contribution was 2-methoxy-3,5-dimethylpyrazine. In summary, the 5 mmol·L-1 MeJA treatment was the most prominent in promoting the improvement of the fruit quality and aroma characteristics of ‘Luntai White Apricot’. |
